(1) Biosynthesis, manufacture, function and application of functional sugar (alcohols);

(2) Food microbial Fermentation engineering, Pathway engineering & Biosynthesis;

(3) Enzyme engineering, Bio-catalysis & Biotransformation.

Biosynthesis of high-value-added food, food additives and medicines using five/six-carbon sugars, glycerol, or biomass as substrate, such as functional sugars/alcohols. Recently, mainly working on D-arabitol, xylitol, D-tagatose, D-allose, 1,3-propanediol, 3-hydroxypropionic acid, 2,3-butanediol and other high value-added foods (additives) and medicines: Screening, identification and development of functional/engineering microorganisms, Discovery of novel enzymes, Directed evolution and rational design of enzymes, Metabolic pathways engineering, Microbial omics and metabolic regulation, Biotransformation synthesis, Fermentation engineering, Molecular mechanism of biosynthesis, etc.; Application and development of high value-added food additives, functional food, medicines and other related products; Rapid detection and evaluation of food-borne microorganism.
